Our background

card building CARD, Phils. - PAFI was established in 1995 as a non-stock,non-profit organization to run a therapy center which has now grown to be not just as a school but a "one-stop-shop" center which provides various programs and services on autism management. CARD is registered with the Department of Social Welfare and Development and the Department of Education of the Philippines.

All Dough Bakery

all dough bakery All Dough Bakery was conceived to be able to provide individuals with autism a specially designed curriculum on bakery training. The curriculum is open for future branching out to accommodate the needs of other children and adults with related disabilities and even those who are within the support system who wish to be oriented in training their own children or sibling with ASD. It started off with a very realistic outlook which focused greatly on pinning down goals that are achievable in a specific span of time in order to insure that both the trainees and those engaged in training will maintain close monitoring on the skills and new capacities obtained during the exercises.

Early Beginnings

The construction of All Dough Bakery building was made possible with the support of The Philippines – Australia Community Assistance Program (PACAP). PACAP provided us the initial guidelineson the bakery and group that runs and implements the All Dough Bakery is the Center for Autism and Related Disorder, Phils. – Professionals for Autism Foundation, Inc. CARD embarked on a series of fund-raising endeavors to further equip this very important quest to ensure the certainty of its realization.

The Lloyd George Asia Foundation based in Hong Kong extended CARD some support in order to cover the funding of the second phase of the bakery construction.

The actual bakery layout consists of the Storage Room, Preparation Area, Baking and Proofing Room, Finishing and Packaging Area, Dressing Room and an Office.

Curriculum Description

student From the existing school curriculum of CARD involving pre-vocational skills in arts and crafts, clerical work, maintenance work and cooking, we at the All Dough Bakery Training Center have developed a more specific curriculum which helped provide and install the skills necessary in bakery training operations for individuals with autism. It is divided into three modules and tackles everything from identifying the ingredients and utensils, mastery of applicable procedures up to final packaging thereafter, while observing and adhering to proper sanitary and safety practices.

The students were initially trained on the basic pre-requisite skills required in order to participate in the operations of the bakery which covers actual preparation of ingredients for pandesal making, actual dough manipulation and molding, basic understanding of oven operations, loading and unloading, basic math for storeroom requisitions and inventory, sanitation and proper storage of tools and equipment.
